A full-time Director of Operations:

  • Cost a year: $140,000 to $200,000

  • Time spent focused on your business: 100%

  • What you get: an employee who runs operations

  • Who executes: they do

  • Risk: a hire you cannot unwind quickly

A Project Consultant:

  • Cost: $15,000 to $50,000 a project

  • Time spent on your business: intense, then drops to 0

  • What you get: a deliverable — a report, a system, a plan

  • Who executes: you do after they leave

  • Risk: the report nobody opens again and fail to implement

A weekly engagement with me:

  • Cost a year: $30,000, or $48,000 for the full engagement

  • Time on your business: every week, for as long as it is useful

  • What you get: a highly experienced operator who works the problems with you and your managers

  • Who executes: your managers do, with me guiding the process

  • Risk: No risk; the relationship ends on your notice

Where the salary number comes from:
A director of restaurant operations in New York averages about $143,000. Add payroll taxes, insurance and benefits — twenty-five to forty percent on top — and the real cost to the business lands between $150,000 and $200,000. That is before the search, the training, and the risk that the hire is wrong.

When you should hire the full-time person instead of hiring me.
If you are running four or more restaurants, or you are building a group and need someone whose whole week belongs to you, hire them. Part-time help doesn't replace a full-time operator at that scale.
Where this arrangement works best is the independent is doing $1 - 3 million a restaurant, where the operations work is real but does not fill a week — and where judgment is lacking, and its effecting the profitability.

What a week looks like:

  • A standing working call on your numbers, the decisions you are facing, what changed since last week.

  • Systems built with your managers rather than handed to them, so they become culture.

  • Direct access between calls, because the problems that matter don't wait for next Tuesday.

  • On the full engagement, a day on site every month and a plan the team runs to for reference in between.

It starts with a free 30-minute call.
