 Pre-Opening & Planning

  • "I have a concept but no location. At what stage should I hire you?"

    • It's recommended that you join the group while you are under construction, but before making major decisions for the business operations. This is the most crucial time for planning the opening. 

  • "Can you help me build a realistic pro forma and budget?"

    • Yes, I have templates that I can offer to assist you in the startup phase of the business. 

  • "Do you help with the legal and licensing 'red tape'?"

    • Not really... while I can certainly offer some advice and shared experience, I am not a licensed lawyer. It is always recommended that you secure an experienced lawyer that is well versed with the local and state laws that you reside in.   

 

The Launch Phase

  • "What does 'The Right Way' actually mean for a Grand Opening?"

    • Operators often open restaurants in an ad-hoc fashion while making decisions when they are at deadline. The Opening Blueprint is designed to be proactive and to make sure that targets are hit daily, so you can avoid the chaos of most openings. 

  • "How do we hire and train a full staff from scratch in this market?"

    • I focus on building a great culture before the doors open so that you don't lose half the team in the first months.

  • "Do you stay on-site during the first week of opening?"

    • This can be arranged as a supplemental service. It is not included in the weekly meeting price.  

 

Investment & Risk

  • "How much does it typically cost to open a restaurant with your guidance?"

    • While its difficult to give an exact number due to the variables of style, cuisine and location. I am confident that we can help you help them avoid the 20-30% "inexperience tax" most owners pay in mistakes.

  • "Why should I spend money on a consultant when I need every cent for construction?"

    • A coach/consultant is cheaper than a failed restaurant. Look at this as an insurance policy.

 

The "Opening Blueprint" Checklist

  • All members will learn and use the Opening BluePrint to create a plan for the smoothest opening of their careers. This document along with many other supplemental documents are used to create a structured and stable opening, allowing operators to spend more time hiring, training staff and creating a culture that will sustain the business after it opens.
